Champagne - Dominique Foureur of Ambonnay

I was lucky enough to share the day with the human encyclopedia, Trong Nguyen of Paris Champagne Tour Company. We visited a small family run champagne producer Dominique Foureur of Ambonnay. Dominique Foureur cellars, built in 1609, are carved into the chalk which forms the basement of the Champagne region. They still complete much of the process by hand unlike the larger producers and the results speak for themselves.
